Ready to take your sourdough skills beyond the basics?

Join Sourdough Rising for a hands-on, intermediate-level workshop designed for bakers who have mastered the fundamentals and are ready to gain a deeper understanding of the craft.

During class, students will mix and develop their own intermediate-level sourdough loaf featuring freshly milled whole grains and/or inclusions. Each student will take home the loaf they prepare in class to proof and bake in their own kitchen, applying the techniques learned during the workshop.

In this fun and interactive class, you will learn:

  •  How to confidently understand fermentation - not just rely on the clock

  •  Understand how hydration, gluten development and flour choice affect dough

  •  How to use bakers’ percentages to confidently customize your recipes

  •  How to incorporate various flours - including freshly milled flour - into your baking

  •  Best practices for adding inclusions like cheese, herbs, seeds, fruit, and more

This class is designed for bakers who want to move beyond simply following recipes and begin understanding how to adapt formulas, improve consistency, and create breads that reflect their own style and preferences.

Prerequisite: This class is intended for bakers who are already successfully baking sourdough loaves at home. If you are new to sourdough, I recommend starting with Sourdough 101 before enrolling.
